Here is my t...An overly long, but amusing article. Here is my take and it generally applies to all (older) wines served at home. It is also one more good reason to NOT buy older wines at meal time...<br />1. Within the standard storage, stand the bottle upright at least seven days before serving. Don't touch it again.<br />2. Well before service open, decant with care and leave it alone.<br />3. Take a taste test. If it is not close to the expected, find a newer bottle of something else and move on.<br />Lastly, if all of the high-tech corkscrews won't work, I have a near-perfect method for opening ANY bottle of wine with a .45 Cal, 1911A-1 pistol - and without firing a round. I learned it in the drunken trenches of duty in Germany, about 1970. It works! I'm not a big Napa Cab guy, but the opportunity to drink a mature bottle of an iconic California wine was wonderful. Being someone who, like you, drinks old wines only very occasionally, I found myself asking all of these questions. The cork crumbled and I picked out the final pieces. The wine was musty and off on first pour, but we let it sit and in an hour it was spectacular - speaking clearly of its origins and singing in a way I can't imagine a Napa wine made today will in some 40 years. It is about three inches long. You just never know when you're going to have to filter out bits of crumbled cork or when you end up having to battle tartrates or heavy sediment somewhere other than the very bottom of the bottle.
